Mr. Fantastic is stretchy, Sue Storm is invisible and Johnny Storm is fiery, but the most recognizable face of the Fantastic Four is the Thing. His rocklike stature is a force to be reckoned with but when he’s made into a cookie he looks almost too good to eat.
Peanut Butter cookies signature cross-hatch pattern lend itself to the same texture as poor Ben Grimm’s cursed look. Sweet and sweet natured, these cookies will make you want to take on the bad guys. It’s clobberin’ time!
The Thing Peanut Butter Cookies
(makes 12)
Ingredients:
1/2 cup (1 stick) unsalted butter
1 cup peanut butter
1/2 cup white sugar
1/2 cup brown sugar
1 egg
½ teaspoon vanilla
1-1/2 cups all-purpose flour
1 teaspoons baking soda
pinch of salt
white icing
black icing
Directions:
Preheat the oven to 350 degrees and prep baking sheets with Silpats or parchment.
In a bowl, cream the butter, peanut butter, white sugar and brown sugar.
Add the egg and vanilla.
In a separate bowl whisk together the flour, baking soda and salt, then add to the wet ingredients until just combined.
Roll dough into a 2-½-inch ball and flatten, slightly indenting the sides. Lay onto the prepped baking sheets. Separately, make a small ball half the size, then shape that into a flattened boomerang shape (for the brow of the Thing) and also place that onto the baking sheet.
Dip a fork into sugar and place crisscross marks along the top and bottom of the larger cookie, and all across the boomerang cookie. Continue with the rest of the dough, then bake for 10 minutes then let cool on a wire rack.
Once the cookies are cool, use icing to place the boomerang shaped cookie on top of the round cookie to form the brow.
With a #2 tip use white and black icing to add eye, nose and mouth details. Once the icing is set the cookies are ready to serve.
