When it comes to holiday movies, look no further for hilarious family fun than Elf. Kids love Will Ferrell's portrayal of Buddy, a tenacious elf who has a joyous outlook on life and an over-the-top devotion to Santa.
Inspired by the movie, these festive treats are striped just like the Candy Cane Forest that Buddy hiked through to get to Manhattan. Since elves try to stick to the four major food groups: candy, candy canes, candy corns and syrup, these sweet vanilla cupcakes are topped with a maple syrup whipped cream frosting. They'll make you smile, and smiling's Buddy’s favorite!
Striped Elf Cupcakes with Maple Frosting
Makes 24 cupcakes
3/4 cup (1-1/2 sticks) unsalted butter
1-3/4 cups sugar
2-1/4 cups cake flour
1-1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon of kosher salt
1 cup buttercream
1 tablespoon vanilla
red food gel dye
Maple Whipped Cream
2 cups heavy whipping cream
¼ cup powdered sugar
2 tablespoons maple syrup
1/2 teaspoon vanilla
Preheat oven to 350 degrees. Prep a cupcake pan with liners.
In a medium bowl, whisk the flour, baking powder, baking soda and salt. Set aside.
In the bowl of an electric mixer cream the butter and sugar until fluffy. Carefully add the eggs one at a time until incorporated, then add the vanilla.
Alternate buttercream with the dry ingredients until combined.
Separate the batter equally into two bowls. Leave one plain and in the second bowl add the red food gel dye, stirring until incorporated.
By the tablespoon, spoon the batter into prepped liners, first the red batter, followed by the vanilla, then the red and finally the vanilla until all liners are filled.
Bake 15-17 minutes depending on your oven. Let cool on a wire rack.
In a chilled bowl of an electric mixer, whip the cream on medium high.
Once peaks start to form, add the powdered sugar, syrup and the vanilla. Turn the mixer up to high until you get whipped peaks.
Frost cupcakes and decorate with holiday sprinkles.
