Here’s an easy peanut butter/chocolate-chip cupcake recipe inspired by the adorable Peanuts gang. And it’s great for a school Valentine’s Day party. Topped with a dark chocolate ganache, these Reese's turned cupcakes are divine and the perfect treat to share with friends.

 

 

Peanut Butter/Chocolate-Chip Cupcakes

You’ll need:

1 1/4 cups flour

1 1/2 tsp baking powder

1/4 tsp salt

1/2 cup honey roasted peanut butter

1/4 cup unsalted butter, softened

1/2 cup dark brown sugar

1 egg

1 tsp vanilla

2/3 cup buttermilk

1/2 cup dark chocolate chips

 

 

Directions:

Combine flour, baking powder and salt in a medium-sized bowl and set aside.

Using a stand mixer, beat peanut butter, butter and brown sugar until smooth, approximately two minutes.

Add eggs and vanilla and combine until mixture is fluffy.

Add flour mixture and milk in alternating batches and mix until combined (do not over mix).

Fold in chocolate chips.

Divide batter into 12 lined muffin cups.

Bake at 350 degrees F for 18-20 minutes, or until a toothpick inserted comes out clean.

Cool completely before frosting.

Top with dark chocolate ganache (recipe follows) and Peanuts cupcake toppers (Buy generic toppers from a craft store and add store-bought stickers of your favorite characters to personalize these treats)

 

 

 

 

Dark Chocolate Ganache

You’ll need:

4 ounces of dark chocolate, chopped

1/2 cup heavy cream

 

Directions:

Heat cream over a double boiler until simmering.

Turn off heat and add chocolate, but do not stir.

Let stand for 10 minutes.

Whisk until smooth but do not over mix.

Cool approximately one hour before using.

*Tip* For a lighter frosting, beat for two minutes using a stand mixer.

*Tip* You can also chill the ganache in the fridge before frosting.
