Things are not as they seem at Miss Peregrine’s orphanage, and even mealtime becomes peculiar.

That’s the inspiration for this remarkable vegetarian chocolate pudding made with avocados that is still as rich and velvety as the real thing. Miss Peregrine is able to transform into a falcon, so as a nod to her peculiar powers these little dessert cups are topped with dark chocolate falcon feathers and a touch of whipped cream.

Miss Peregrine’s Peculiar Pudding

(makes four servings)

Chocolate feather ingredients:

4 oz dark chocolate

 

Pudding ingredients:

2 large ripe avocados, peeled and pitted

? cup unsweetened cocoa powder

Pinch of salt

? cup honey

1/2 cup chocolate soy milk

 

You’ll need:

Whipped cream

 

Instructions:

Prep a baking sheet with a silpat liner.

In a heatproof bowl, melt the chocolate in the microwave at 20 second intervals. Once melted, spoon four feather shapes onto the prepped silpat. Place in the refrigerator until solid, approximately 15 minutes.

Take the chocolate feather shapes out of the refrigerator. Use a skewer to cut at the outer edges of the shape, creating feather-like cuts out of the chocolate. Return to the refrigerator until ready to use.

In a blender add the avocados, cocoa powder, salt, honey and soy milk. Blend until the mixture just comes together, then spoon into cups.

Top with a dollop of whipped cream and a chocolate feather to serve.
