Directions:

For the green turtle dough, in a bowl, whisk the flour, matcha powder, baking powder and salt.

In the bowl of an electric mixer, cream the butter and the sugar until fluffy, then add the egg and vanilla.

Slowly add the flour mixture until just combined. Wrap in plastic wrap and refrigerate until you are ready to use.

For the different colored masks, in a bowl, whisk the flour, matcha powder, baking powder and salt.

In the bowl of an electric mixer, cream the butter and the sugar until fluffy, then add the egg and vanilla.

Slowly add the flour mixture until just combined, then separate the dough into four. Using the four different colored food-gel dyes, color each quarter -- one blue, one purple, one orange and one red. Wrap in plastic wrap and refrigerate until you are ready to use.

Preheat the oven to 350 degrees. Prep baking sheets with Silpats or parchment.

Roll out the green dough to about 3/8 inch thick to make sure you can capture all the detail. Dip the cookie cutter into flour and shake off the excess, then press the cookie cutter into the dough. Take a small knife and run it around the face, separating the mask from the face. Move the head pieces to the prepped cookie sheet.

For the masks, roll the dough out to 3/8 inch thick, flour cookie cutter and cut out just like you did with the green dough. Cut around the same face area, this time moving the different colored mask pieces into the missing areas of the green dough, completing the cookie just like a puzzle piece.

Bake for 10 minutes and let cool on a wire rack.

Using a #4 tip and white icing, pipe the eyes on each turtle. Then with a #5 tip and black icing add pupils to the eyes and the mouth details.

Cut the tip off the jumbo heart sprinkles and place upside down inside the mouths for the tongues.

Once the icing is dry the cookies are ready to serve.
