If you liked the theatrical version of Payback, then I would venture you will also like this (the original) cut. Then again, I like movies with less than likable main characters and ambiguous endings. In this cut there is a whole new third act and ending and the subplot of Kris Kristofferson's character (and son) is completely removed. There is no Kris Kristofferson in this cut. We never meet the "head man", just hear a voice (not spoiling this!). Porter (Gibson) is portrayed in a much more vicious light and there is also no narration (by Gibson as Porter). The climax of this cut is much more violent but I also feel it's much more satisfying for a fan of crime/noir films like myself. If you're a fan of Donald E. Westlake (AKA Richard Stark, the author of the novel this screenplay was based on), then I think you'll enjoy this cut more as well. The DVD has some great interviews included in the special features too.
