Tim Burton’s sequel to Alice in Wonderland takes us back to Underland in Alice Through the Looking Glass. Alice reunites with her friends for magical adventures all while being pursued by that nasty Red Queen.
These little tea cakes, however, are sweet treats fit for a proper tea party. Blue cupcakes topped with white frosting reminiscent of Alice’s signature attire, they are topped with a red heart as a nod to the Queen of Hearts.
Alice Through The Looking Glass Tea Cakes
You’ll need:
White frosting
Red heart sprinkles
Cake ingredients:
3/4 cup (1-1/2 sticks) unsalted butter
1-3/4 cups sugar
3 eggs
2-1/4 cups cake flour
1-1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup buttermilk
1 Tablespoon vanilla
Blue food gel dye
Directions:
Preheat oven to 350 degrees. Prep a mini cupcake pan with liners.
In a medium bowl whisk the flour, baking powder, baking soda and salt. Set aside.
In the bowl of an electric mixer cream the butter and sugar until fluffy.
Add the eggs one at a time until incorporated.
Add the vanilla and a drop of blue food gel dye and stir to combine.
Alternate buttermilk with the dry ingredients until combined.
Spoon the batter into prepped liners, bake for 10 minutes depending on your oven. Let cool on a wire rack.
When cool, pipe a dollop of frosting on each cupcake and add a red heart sprinkle to serve.
